One thing you can do with apps which are a bit flakey, is to make a backup of the working app’s APK (install) file.
Then if you get an update which fails you can reload the version which was OK – you’ll probably need to change the file manager permission allowing installation of apps from unknown sources.
If your phone’s file manager doesn’t let you do this I can recommend the excellent “File Manager Plus” by alphainventor which can create app backups. the problem is that more and more software is being designed expressly to keep users from the underlying code, which then makes it vital that developers get it right every time. But while perfection is the ideal and expected norm for users, evidence suggests that reality j is a something different. I sit firmly in the camp that can sit back and wait for glitches to be resolved by others because I’m confident that it’s not me or my devices that are at fault.

I'm not sure what your point is here. How many organisations actually publish their source code, allowing user access? Problems with loss of intellectual property (IP) and vulnerability to hacking immediately spring to mind.
However there are plenty of open source projects, where the code is available from repositories like GitHub, Bitbucket etc
One such is the Android Open Source Project (AOSP) https://source.android.com/docs/setup/about taking the source code out of the hands of the proprietary Android version developed by Google, giving users the ability to install alternatives to Google with versions such as LineageOS etc https://lineageos.org/

Ahh - I think I see what you mean, ie in Windows there are lots of things you can click on to do stuff, without knowing what the stuff is actually doing in the background. To me the OS has very much been "dumbed down" to suit the majority of users who are non technical, and I find this particularly frustrating as I like to know what's happening in the background, though there are many ways of circumventing this dumbing down.
That's why so many people do like Unix/Linux etc based systems which although they can have GUI interfaces, a lot of what can you do is terminal based, issuing commands at the command-prompt (often very complex with multiple parameters as optional input) and can be very satisfying as you feel fully in control and can achieve a lot with a few commands
