I have 3 readings in the digital meter. One has the Letter "T", one has the Letter "R1", and one has the letter "R2". Which is the Peak and which is the Off Peak?
If T = R1 + R2 then I would say T means total. I would write down R1 and R2 readings and boil a kettle or something to consume some electricity during daytime hours then check your R1 and R2 readings again. The one that has advanced will be your daytime peak reading.
You may then want to check the R1 and R2 billings on your statement to make sure you are being billed correctly for day and night. I have a recollection of someone reporting a reversal of pricing for day and night which is far from ideal.

I'm an Eon Next dual fuel customer with no particular expertise but have some time on my hands that I am using to try and help out a bit.
You’re welcome. I’ve tried searching for which rate (1 or 2) is day or night but it wasn’t conclusive. You could perhaps do a search for how to read your specific type of meter. Hopefully someone in the know will pop in and assist with this.
Have you got this sorted/figured out which rate is which now?
Please let me know if you have any concerns over your readings, and be sure to check your bill like JoeSoap mentioned to ensure the rate that is advancing in the day, is the rate you're being charged for on the 'day rate' as they can sometimes be the wrong way around.
Just to note, if they are the wrong way around on your bill and you're charged a 'flat rate' then it's not too much of an issue. If you're however on an Economy 7 tariff where you're charged a lower rate for your night rate, this is something that will need to be looked into 😊
