Currently with Eon on a standard fixed tariff but will have an Mercedes EQB arriving in around 6 weeks (which isn't on the Next Drive Smart Tariff compatibility list) nor is the Easee One EV charger we are looking to get installed.
Am I correct in thinking that if I moved to the Next Drive Fixed v6 tariff that it would be a case of myself manually controlling off peak charging either through scheduling on the Mercedes or Easee app for the electricity to be billed at the cheaper rate?
Also, is all electricity used during off peak hours billed at the cheaper rate e.g. washing machines, dishwashers, etc?
Yep, just set the car or wall box (not both) for 00:00-07:00 then you'll only use the cheap rate. Most cars and wall boxes will also offer a quick override for an immediate charge if needed (at full price).
All household energy consumed between 00:00 and 07:00 is at cheap rate, so yes, schedule dishwashers and washing machines for then too.

@Indyk_EONNext is your meter a 2 rate meter, ie you have 2 meter reading if so make sure you go "2R version of the drive tarriff, if you just one meter reading then fine

That used to be the case, but they seem to have gotten over that peculiarity and even seem to be configuring previously single rate meters as 2-rate when put on drive.
