At the top of each statement you will see the previous balance. You then have charges based on your meter readings, credits from the EBSS scheme etc. and payments you have made, ie. your DDs. Finally you will have your new balance.
With simple arithmetic you will be able to use the above to see for sure if your account is being handled correctly.
Check your meter readings as shown on your latest statement tally with what’s on the meters and also that any DDs showing tally with what your bank count is showing.
If you are worried that things aren’t correct you will need to contact customer service.

Trouble is my bank account tells me they've taken money but the actual EON statement says they credited me the same amount. So my credit keeps going up.

I’m not quite following you. If they’ve taken the money from your bank then that exact amount should indeed be credited to your energy account.
Is the real issue that you’re not actually being billed for your consumption? You could submit some manual up to date meter readings and see what kind of bill is generated as a result.
Statement starts off with balance of £772.80 CR
Electricity charge (based on meter readings) of £231.83 DR
HM GOV discount energy support bill of £67 CR
Direct Debit collection of £115.26 CR (this is where it goes wrong as surely that should be DR?)
New balance of £723.23
This I first noticed around Nov time and rang them but couldn't get through. as in noticed they were crediting me when they should've been debiting me...I think as I've gotten so confused by it all.
