A standard sized 4 position hob please - I don't intend to convert from my trusty gas hob, 34 years old with no reliability issues, I'm posing the question to help others as I've already guessed my own answer.

I'm probably not going to be much good. I love them for all the non energy/scientific reasons. I've not had gas in the kitchen since 1975. Don't know if this link would be helpful for others?

I think this gets to the nub

“up to 90% of the energy consumed is transferred to the food, compared to about 74% for traditional electric systems and 40% for gas.” So induction is better than normal electricity and gas in terms of energy efficiency, excluding price considerations.

But when you factor in price of fuels, and electricity being 4 times the price of gas, my inefficient gas hob comes out the cheapest to run. Given that 40% of our electricity comes from gas generation and there is inefficiency in the distribution system I think it would be a struggle to make the case on environmental grounds too.

In the winter, the fact that much of the heat from a gas hob is going up the sides into the kitchen, well that might be seen as a benefit (heating the home) rather than a negative. I'm all for new devices, providing they actually make sense financially. I've never been one for keeping up with the Jones's, I'm content to plough my own furrow.
@retrotecchie might have trouble deciding which of his local "Jones's" to keep up with though if he was that way inclined!

Love it. Spot on. If the concerned household wasn't setup for gas then induction must be the way forward, particularly if the decision is energy/financial orientated.
From the culinary side I love having the ability to accurately control cooking temperature. Rather like gas the control is instant. No more milk pans boiling over.
As the hob is just a sheet of glass cleaning is as simple as a wipe. No scrubbing or harsh chemicals required. No nooks or crannies for things to get into. Sorry but I would never swap it.👴😊

Whoa! wait a minute. Beki's test looked like about 0.121 kWh to boil a litre of water in her favourite induction-rated pan. I've not seen anyone here report the same test on a plain old gas hob or a plain old electric hob for comparison. Without comparison, you are being the old one-handed sales rep waffling on about "this much better".

It would be good if anyone has a conventional electric hob to do the experiment. Some comparison would be useful. 😊

My plain old gas hob used 0.27kWh. It is supplied from the type of meter which measures cubic metres and has three clicky-wheels after the decimal point to show litres of gas burned. The conversion factor which I use is "about 11.2 kWh per cubic metre" which does not directly appear on your gas bill but can be calculated from it, as x"calorific value" (MJ/m^3) x1.02 /3.6(MJ/kWh) from a calorific value near to 39 MegaJoules per cubic metre. Gas does vary a bit around those numbers but using 11.2, my gas hob today took 11 minutes to boil 1 litre of water in a pan from 16C, using (xxx.148 - xxx.124 m^3) about 0.27 kWh to do so (much worse than theoretical perfect near 0.1 kWh). Looking at how quickly that pan cools after turning the heat off, losses from pan to surroundings look like less than 0.08kW, which is small compared to >1.4 kW consumed by the gas burner. I might be doing this wrong using a small pan with the medium burner, so I'll try again on the small burner tomorrow. It seems that more than half of the heat in the flame missed the water.
