My gas usage has doubled/trebled on certain days even when everything is switched off.
The first increase coincided with a new fridge freezer being installed?? Large increase for a few days then back to normal. Further increases the following week for around 10 days. Normal readings for a few weeks, but I’m now charged 3 times more again for the last few days.
It is definitely something to question when you see your gas usage spike like that!
While a new fridge freezer wouldn't typically affect your gas usage, it's interesting to hear this is when you noticed the first increase.
Can I ask what you are using to track your gas usage? Is it an App, IHD, meter readings?

please explain what you mean by everything being switched off? If nothing is on your usage should be zero. My own gas use in the summer is minimal as my water is mainly heated by a solar panel . I used 78 kWh in June but much less than that this month. What are your numbers, as any diagnosis depends on facts?
on the odd days when it’s cloudy and insufficient to heat my water the boiler kicks and consumption is up to 7 times other days.

Hardly been home much since mid-June so heating and hot water been off for most of this time. Would expect the standing charge of around 30p to be the only cost per day, but as per the attachments, have seen spikes in the usage on the app. This is consistent with usage on the meter and what I have been charged.
I suggest you look at the days with the high levels of consumption by hour or half hour and then think back to what was happening on those days. I use gas for infrequent water heating but everyday cooking. On the narrower time slots I can see when the grill, hob or stove was in use. I can also see (because of time of use) when the boiler kicked in ( only twice this month). Use the kWh display to eliminate the standing charge from the data, and you’ll see actual consumption - many days will be zero as you stated.
Might be clearer if you selected kWh instead of £, but £3 extra usage is in the region of 50kWh.
That’s quite a bit, so if the boiler is truly off (switched off at mains) then investigation is needed. Just a dripping hot tap or a boiler in ‘comfort’ mode can use a surprising amount of energy, but unlikely to be that much.
Assuming you can’t smell gas anywhere, the next steps would be to verify that the data is actually for your meter that supplies just your gas. If certain of that, then you’d have to start suspecting the meter.
Have you been able to review your gas usage any further? As @rwh202 has advised if there is no smell of a gas leak and nothing has changed in terms of your usage or appliances then it may be something that needs looking into further.
